Pollock

Pollock is a ray-finned fish from the haddock family which can be found in the Arctic Ocean, the north-west, the north-east and the west of the Atlantic. Pollock can reach a length of one metre and a maximum age of twenty-five. Pollock is a salt-water fish and lives in temperate climates. The maximum depth at which this species can be found is 200 metres below the surface. Most of a pollock's diet is made up of animal food: macrofauna and mainly fish.

Herring

Herring is a ray-finned fish found in the northern hemisphere, with a silvery body and a grey-green or blue-green back. Herring can grow up to forty-five centimetres in length and weigh a maximum of one kilogramme. They live in depths of up to 200 metres.

The larvae live on plankton, and mature specimen live on larger plankton (such as copepods), shrimps and smaller types of fish. Herring is found in large schools of sometimes millions of animals.

Herring is a fatty fish rich in Omega-3 acids. Gutting the herring involves removing the gills, intestines and throat. By removing the gills, the fish can bleed dry, keeping the blood from the flesh and white in colour.

Hake

In Europe, Cape hake has acquired quite a reputation for its fantastic quality. Due to the two currents that cross at the southern tip of South Africa, this is a powerful fish. As a result, it has a beautiful white texture with a mild creamy flavour. Though not small-scale, the fishery is highly sustainable and the only one on the African content to be MSC certified. This fish grows to fifty centimetres in length on average, though some reach lengths of almost two metres.

Working very closely with the Cape Town fishing community, Fishes sells a variety of their products. Each of these products reflects the unique value of the Cape hake, giving you a taste of the rich flavours of the sea near South Africa.

Cod

The only cod supplied by Fishes is that from the North Atlantic. This marvellous cod is caught off the coast of Norway, at no less than twelve miles into sea, by means of what is termed long-line fishing. Hooks, fitted to a long line at equal intervals, must induce the cod to bite. As the catch is conducted at night, it does not pose a danger to birds. As such, it is an extremely sustainable method, both in terms of minimising damage to the seabed and bycatch. A cod reaches an average size of ninety centimetres, but fish of one and a half metres are no exception. It mainly feeds on small lobster and crab, shrimp, small fish and mussels. Its meat has a delicate flavour and a loose structure.

Fishes collaborates with the fishery in Måløy, the town where all fishermen who bring in the MSC cod come from. This fishery also supplies Fishes with MSC certified haddock.

Mackerel

The mackerel is a ray-finned fish from the herring family (Clupeidae). Mackerels grow to a length of thirty to fifty cm. The mackerel is a school fish, swimming close to the water surface. During the summer, the fish swim close to shore as they migrate north. They stay in deeper waters in wintertime. They hunt for food, which includes crustaceans and small fish, close to the surface. The mating season runs from May to June. Mackerel is a very healthy type of fish with extremely high levels of vitamin B12.

Mussels

The mussel has a shell that is elongated, asymmetric, triangular, relatively thin but strong. The outside of the shell is purple-blue in colour. Mussels of about one centimetre in size are called seed mussels. When the mussels reach a length of about four to five centimetres, they are called young mussels. After approximately two years, the mussels are six to seven centimetres in length and suitable for consumption. The mussel is a filterer. All he has to do to survive is to open his 'dwelling'. The mussel draws in water via the incurrent siphon and discharges it via the excurrent siphon. Most of a mussel's food is made up of plankton. Other free-floating substances such as silt are also filtered from the water.

Sardine

Sardine, sometimes also referred to as pilchard, is a group of fish from the ray-finned herring family. Sardine can be found virtually all around the world, but its name derives from the Mediterranean island of Sardinia, where they used to live in abundance. Fishes sardines come from a fishery in Bretagne where they still fish with small boats to catch the very best sardines.

Haddock

Fishes haddock originates from the cold waters of the North Atlantic. This delicious haddock is caught off the coast of Norway, at no less than twelve miles into sea, by means of what is termed long-line fishing. Hooks, fitted to a long line at equal intervals, must induce the haddock to bite. As the catch is conducted at night only, it does not pose a danger to birds. As such, it is an extremely sustainable method, both in terms of minimising damage to the seabed and bycatch. Haddock can reach a length of 100 cm and grow to be 20 years old. It swims from the seabed up to 10 metres underneath the water surface.

Plaice

Plaice is a flatfish found in abundant numbers in the North Sea. A plaice's right side is green brown in colour, with orange dots. The eyes of a plaice are located on the right-hand side. The left side (the blind side) of the plaice is white. Right after birth, small plaice swim upright, making them look different from other fish. After about 6 weeks they undergo a metamorphosis, with one of their eyes moving to the other side. They then start developing into a flatfish. An adult plaice swims with wavy movements, mainly using its long dorsal fin and anal fin.

Fishes plaice is caught by a Dutch fishery using a modern method that does not damage the seabed and that reduces the bycatch to a minimum. For that reason, this fishery was awarded the MSC quality label.

Sole

Sole is a flatfish living in the sandy and muddy depths of the North Sea and English Channel. Sole derives its name from its oval shape. Its small eyes are set closely together on the right side of its body. This enables the fish to look out for passing prey while dug halfway into the sand. Like all other flatfish, sole is born as a 'normal' fish, with one eye on each side of its body. But as soon as it reaches a length of just over 1 centimetre, the young sole undergoes a metamorphosis into a flatfish. A sole can reach a maximum length of about 70 cm.

Fishes works with two sole fisheries, one from Hastings in South England and the Dutch Staandwantvisserij. They apply an extremely small-scale fishing method, which means the quality of the fish is sublime. Thanks to the stake nets, the fish are not damaged and arrive at the different ports on a daily basis.

Tuna

The American Albacore tuna is a particularly tasty variety of tuna. It travels the entire Pacific Ocean searching for food, which usually consists of fish such as sardine and anchovy. During the summer months and surrounding time, this white tuna travels along the west coast of the United States. Reaching an average length of one and a half metres and with beautiful white flesh, this tuna is rich in Omega 3 fats and has a rich and mild flavour.

Fishes works closely with AAFA, the tuna fishery of Natalie and Jack Webster and their fishing families. During the season the tuna is available fresh, while it is sold frozen or as conserves in other months. Thanks to the onboard freezing methods, frozen tuna is as tasty and healthy as when it is fresh. Tuna is very suitable for grilling or frying, but also delicious as sashimi.

Salmon

Wild salmon is born at the origin of a river, after which it sets out on its journey to the salt waters of the ocean. This is where the salmon starts eating and growing. Depending on the species, the salmon will stay in the salt water for 4 to 6 years, after which it returns to the river where it was born. As soon as the salmon enters fresh water, it stops eating and uses its reserves to return, within ten centimetres exactly, to the spot where it was born. Here it will spawn, and immediately after that, the salmon dies a natural death.

Fishes works alongside various fisheries that fish for salmon using traditional methods. All salmon available from Fishes is caught in Alaska during the summer months. There are five varieties of wild salmon, all certified with the MSC quality label for sustainable fishing. They are Keta (Chum), Pink (Humpy), Sockeye (Red), Silver (Coho) and Chinook (King). Fishes mainly sells Keta, Pink and Sockeye.
All fish are caught in the mid-June to late August period. This is a strict stipulation set by the State of Alaska, which has applied a sustainability act for the fishing industry since its establishment as an American state in 1956. The fishing season does not open until a sufficient number of salmon have reached their final destination for good reproduction.
